Primal Coconut Custard

So I have been intrigued by the Palaeo diet and all this primal diet stuff… other than the 60% fat you are suppose to eat per day, the lack of refined foods, sugar and dairy is interesting. This was all spurred by this article in Scientific American about that mummy who had heart disease, and the debate on whether the heart disease was actually not from high fat, but high carb diet. I thought of Jess when I started to research this way of eating as the dairy is a problem for her. This is the perfect dessert, and man o man it is rich and delicious. This weekend we are cracking out the ice cream maker and using this base recipe (with liquid eggs) and use it as a base for blueberry coconut ice cream.

Kat’s Coconut Custard

1 can of coconut milk (not powdered, the real stuff)
2 eggs (i prefer my custard runny)
1 teaspoon vanilla extract
3 tablespoons of Splenda, or sf maple syrup (any sweetener you wish)
2 tablespoons of shredded coconut

Grab a deep saute pan and place on the largest element on the stove. In a mixing bowl mix all ingredients above. Crack out ramekin cups (I use 6×4 ounce cups)

Pour mixture evenly into the 6 ramekins, and place them into the saute pan. Fill saute pan halfway with water, and turn the element on high, uncovered until the water boils. Turn down the heat to simemr and cover for 45 minutes. The custard will looks gooey still after 45 minutes, but firm up as you chill in the fridge for 3 hours.

This is a great recipe to eat if you are having hard workouts, as the fat really stimulates the system and is very satisfying. The paleo crossfit people are crazy in shape and they drink coconut milk lattes.. i want whatever they are doing !!
Nuts on this are 103 calories, 2 g carb,s 10 g of fat, 4 g of protein.

Kat! I somehow missed this post, I am starting to eat as paleo as possible for the month of june, and at the end of it decide whether it works for me.

So many aspects of it make sense to me and for me, considering my dairy issue, and carb addiction. I’m going to have to get a “meat person” whether it be rowe farms or at the market…
