Summer… Salad Time !

Stop ! .. “salad time”..so MC Hammer…

I grabbed this recipe from a website called Beariatric.com

They seem like a swell couple and had some great recipes… but I can never leave well enough alone, so of course I tweaked this recipe.

Buffalo Shrimp

1 lb Zipper back shimp 21-30 per bag

1 tablespoon olive oil

1 teaspoon Old Bay Seasoning

1/3 cup of Frank’s hot sauce

1 tablespoon butter, Becel.. whatever you have going on at your house

some celery stalks and baby spinach for serving

Directions:

saute shrimp in heated pan with oil, while they are starting to heat up and turn pink i grab them from the pan and de-shell them.. you can leave them on as well… whatever you want to do

once cooked, transfer to a bowl that has the Old Bay Seasoning and Butter/margarine awaiting and coat until everything is delicious looking.. slather Frank’s Buffalo wing sauce and coat, set aside so all the juices absorb

Blue Cheese Dressing- so easy !

makes one cup, serving size is 1 tbsp (so 16 servings per recipe)

4 ounces of blue cheese, crumbled

3 tablespoons milk

2 tablespoons vinegar white

1 teaspoon Dijon

1/2 cup of Hellman’s reduced fat mayo

Directions: crumble blue cheese, add the rest and squish up until creamy good.

In a good sized bowl, toss in baby spinach, cut up celery, the shrimp and some of the blue cheese dressing and VOILA delicious

My Daily plate says that  8 shrimp, some baby spinach, and 1 tablespoon of blue cheese dressing is 190 calories, 25 grams of protein, and  8 grams of fat ! Non-WLS people double the amount.
