Chipotle Tuna Bites

We found this great chipotle tuna in Perola Mexican market and I knew I needed to try it.

This morning whilst sipping a protein coffee I decided to use the tuna in a “tuna muffin” recipe i had used in the past.
The name tuna muffin isn’t at all accurate, as they are more like mini crustless quiche.
Ken, who didnt have protein coffee, couldn’t wait to eat two of these for breakfast ! This recipe made 9 muffins, and once cooled, can be stored for up to a week in the fridge. Of course everyday tuna can be subbed in, and i would play with the spices to enhance the flavour.

Chipotle Tuna Bites
1 can of tuna (3oz can) drained
3 eggs
2 cups cottage cheese (i use the 2%)
salt & pepper
10 black olives
1 tbsp cilantro (fresh or frozen)

* because the chipotle is there, i didn’t use any other seasoning other than throwing in some cilantro, but have used parm cheese, Italian seasoning, garlic etc when making in the past. These are a blank canvas, you can go nuts and experiment !
note: the chipotle tuna is a strong red colour.. don’t let it put you off of it !

Directions:
Mix well, and pour into greased or PAM-ed muffin tins, and put into a preheated oven (350 degree oven) for 30 minutes.

I served ours with this sauce, which was also bought at Perolas.. it has no sugar, and adds a nice colour and flavour.

p.s. i have buffalo chicken wing tuna bites cooking in my oven right now. cause everything is delicious with blue cheese and frank’s hot sauce~!
