Nothing Says Summer Like…

SALADS !

well cottages, iced lattes and swimsuits also say summer.. humour me here !

So Ken said to me the other day “I miss all the salads we use to eat” and I immediately shot him a look like his body had been invaded by aliens. I love hot protein on crisp greens, so the heat of the meat makes everything wilt a bit. SO in honour of the beginning of summer, I whipped this up last night and we had it tonight for dinner.

The response was “SEE this is what I am talkin’ about….. this is a “do-over'””
Thumbs up from a non-bypassed is always an indication that you hit one out of the park.

Thai Beef Salad

1 lb of flank steak
1/4 of fish sauce (OR low sodium soy sauce)
1/4 lime juice
3 tbsp minced garlic
3 tbsp minced fresh ginger (i grate mine because i hate chopping ginger.. it never gets small enough)
3 tbsp fresh cilantro (i freeze an entire bunch and hack off what i need)
1 tbsp sesame oil
1 tbsp garlic pepper hot sauce (the one with the chicken on it in vietnamese restaurants)
1/2 cup of green onions, chopped
1/2 cup of chopped cucumbers
2 large tomatoes, chopped

Take out a nice heavy skillet and heat with a dab of oil… sear both sides of flank steak and cook until desired done-ness… (like 5 minutes per side or so if you want medium)
take off and tent meat with aluminum foil to cool..

While steak is cooling, throw together rest of ingredients in a salad bowl, slice steak on a bias and throw into salad and toss…

I finish it with a sprinkle of sesame seeds. So delicious, good protein and so flavourful.

Nutritional Dets are :156 calories, 8 grams of fat, 4 carbs, 1.5 sugars, and 15 grams of protein per 1/2 cup
** I ate 3/4 of a cup tonight because it was SO delicious !

Ken gives it two thumbs up (taste testing last night)

…i like to call that hot cock sauce, but i’m kinda crass.

salad looks delicious! i would eat anything that had cilantro and sesame seeds sprinkled on it.

it was beefy good…. ken wanted it for lunch today, so that is a good sign.
