Post G20 Saucy Chicken with Black Beans

Ken has been working from home this week because of the G20 and I wanted to leave him a recipe that was easy and fast to make so dinner was ready when I got home. I have made this recipe from bariatric eating numerous times before, and every time it tastes slightly different. Cat mentioned this was one of the few chicken dishes her stomach could tolerate, so I dusted it off for a “do-over”
This recipe calls for two chicken breast… i use one mondo chicken breast that weights just under a pound… OR you can use the leftover chicken from the grocery store roaster.

So this morning, right from the freezer I threw in a frozen chicken breast into the crock pot with some chicken stock… like I said, already cooked chicken can be used for this recipe.

Chicken with Black Beans

2 chicken breasts, diced
1 medium onion, chopped
1 clove garlic, minced
One 14-ounce can diced tomatoes, drained
1/4 cup Salsa
1 teaspoon cumin
1/4 teaspoon oregano
1/4 teaspoon black pepper
1/2 teaspoon Splenda
One 14-ounce can black beans, drained and rinsed
Shredded cheese, sour cream, olives

In a large saucepan, sauté the onion, and garlic in the olive oil cooked through. Add chopped chicken and the remaining ingredients and let simmer for 10-15 minutes until thickened. Serve with cheese and sour cream, and sliced olives. (For your family, roll up in flour tortillas and top with cheese. Place under the broiler until cheese is bubbly. Add a spoonful of sour cream and sprinkle with diced tomatoes or avocados.)

Makes 6 servings for WLS… i usually eat 1/2 cup, Ken eats a full cup with toppings.

NOTE : i have morphed this recipe by adding a couple of things. I add some fresh cut up tomatoe and fresh cilantro in lieu of salsa.. it just depends on whether i have salsa in the house.
as well.. i use a chipolte spice, and what i think adds the most flavour is this.. and minimal to the calorie count…ENJOY !
