Morphed Egg Bites…

more like “what am I am going to make to use up a bunch of stuff in the fridge before our vacation ?!

I made these last night as we have been eating easy peasy things.. and nothing is easier than popping one or two of these in your mouth when you are on the go. I also wanted to use up spinach, mushrooms, and our eggs. Eggface has a great base recipe for her egg bites, which are essentially crustless quiche. This version is a hybrid of some of her recipes, with some of the stuff I had in the fridge, and lots of cheese… as we all know, cheese makes everything better.

Morphed Egg Bites

1.25 cups of egg beaters (or 5 eggs)
4 slices of ham lunch meat
1/2 onion (saute)
1/2 cup of cooked spinach (with water squeezed out)
10 mushrooms, cut up and saute
1/2 cup of 2% cottage cheese (needed to get rid of it so i threw it in)
4 ounces of shredded cheddar cheese (or whatever you have on hand)

Saute all the veg and throw in a bit of garlic powder or fresh garlic, let cool. Combine all ingredients and spoon into muffin tins and bake for 20 to 30 minutes at 350. I used the mini muffin tins so two mini muffins = 1 large muffin.
Serving size is 2 muffins (or 4 mini muffins)

Nutrition on these are : 68 calories, 3.3 grams of fat, 2grams of carbs, and 6.25 grams of protein
