Buffalo chicken wings and coleslaw

I couldn’t come up with an cute catchy title for this… so i thought i would just lay it out. I asked Ken what his favourite meal was, and two days ago he said, “Buffalo chicken with homemade blue cheese sauce”.

This is a Susan Maria Leach recipe that saved my life early on. We usually have Stilton or blue cheese in the house so i use either to make the creamy sauce for the side. What i love about this meal is it is a “one pot ready in 30 minutes” sort of deal, especially good when you are coming home from work. Frank’s sauce has virtually NO sugar in it, making it great for those who are watching refined sugars.

Buffalo Chicken

8 boneless skinless chicken thighs (~ 2 lbs)
1 cup chicken stock
1/2 cup of Franks Buffalo Wing Sauce
some EVOO

Heat sauce pan and brown chicken (aprox. 10 minutes), add 1 cup stock and 1/2 cup of Wing sauce and let chicken poach in sauce for 30 to 40 minutes, until done (uncovered pan). Serve and splash chicken with a bit more Buffalo Sauce.

Blue Cheese Dressing

4 ounces of blue cheese or stilton cheese, crumbled
3 tablespoons milk
2 tablespoons white vinegar
1 teaspoon dijon mustard
1/2 cup low fat mayo

combine and store in fridge until chicken is done. Serving is 1 tablespoon.

We always serve this dinner with a batch of coleslaw on the side OR carrot and celery sticks. It seems to me to the perfect meal.

Whatever leftovers we have Ken eats the next day for lunch OR i let cool, chop up with some celery, throw the rest of the blue cheese dressing on, and it makes a creamy, and saucy buffalo chicken salad.

211 Calories, 6 grams of fat and 28 grams of protein
