Company is coming !

My friend Jess introduced me to this recipe. It is one of those recipes that because it is SO simple, it becomes elegant. This is the perfect thing to serve when you have company coming over, as it pairs really well with a nice light white wine, and you cant mess it up.

I made it on Friday night after we got home from Value Village (resale shop) hunting for bargains. More on that later… to the recipe !

Feta Lemon Rosemary Chicken

1 or 2 boneless skinless chicken breasts (about 12 ounces)
5 ounces of feta cheese (omit if you are paleo-primal)
bunch of fresh rosemary
lemon, juice from said lemon, and 2 tbsp zest
olive oil

break out a sturdy pan to bake in, throw chicken breast in pan, cut up chunks of feta and place around chicken, and lay rosemary sprigs on chicken. Toss in lemon zest and juice of one lemon, and then take olive oil and drizzle the entire dish with it.

In the pan, ready to go

Pop into oven at 350 until chicken is done, aprox. 30 minutes (dependent on how thick the chicken breasts are) The smell in your house will be divine as the rosemary starts to heat up and roast. The lemon and feta mix and make this fabulous thin sauce you can pour over the chicken when you plate it.

I plated it with some mashed purple potato.. Ken loves this dinner, and it is incredibly easy and light on ingredients.

As for my vintage find… i bought a shearling and red fox fur coat for $14.99 ! I am going to be warm this winter. Me modeling my coat in our kitchen.. i was on a cloud the whole night.
