Pizza that isnt Pizza ’cause

It’s soup ! The fall weather hit hard this past week and it brings with it thoughts of harvest soups, root veggies, and a warm kitchen. I had a hankering for pizza thos week and pulled out this recipe I downloaded from pouchfriendly.com. Anything that tastes remotely like pizza without all the starch is okay in my books.

I was skeptical looking at the ingredients list as it included beef broth.. which I would never associate with pizza.

Anyway, I cranked the numbers and my suggestion is to use turkey sausages for this recipe, and save the fat for full on pepperoni, as it is what will give it the taste of pizza.

Tipton Pizza Soup

1 14.5oz can Italian style diced tomatoes
1 12oz can of Rotel tomatoes (diced tomatoes and chiles) **(added a small can of chopped green chiles)
1 32oz carton beef broth
1 4 oz mushrooms (1/2 cup)
1 med green bell pepper diced
1 small onion diced
1 cp grated Monterey cheese (** i used a pre-shredded pizza blend)
1 cp grated parmesan cheese
1 lb. Italian sausage **used turkey sausage here to cut down the fat
1/2 lb pepperoni (thinly sliced)
1 tsp garlic powder
2 tsp oregano
2 tsp Italian seasoning

saute onions, add veggies and beef and brown in pot. Drain any fat. Add spices, and pepperoni and let it render a cook a bit, add the rest of the ingredients, minus the cheeses and let simmer for at least an hour. Finish with cheese as you scoop into the bowl.
Makes 14 cups

This soup really does taste like pizza, and it was good to visit an old friend again without having to deal with all the carbs as well.
Nutritional Info per cup: Calories 203, 13 g fat, 5 g carbs, 15 grams protein, fibre 1 g

Forgot to post after I had this. Damn! It really does taste like pizza. Thanks Kat for being do generous while my back was at it’s worst. 🙂
