Oh VEY ! Adventures in Bagels..

SO.. I came across an online recipe that made bagels, and while I am not inherently missing bagels, I am missing something low carb to eat with cream cheese or smoked salmon. I also have those cute “donut” pans that Eggface uses, and thought this would be another application.

This is a dead easy recipe, and now having made it once, am starting to brainstorm other variations… like cinnamon raisin ‘bagels”, chipolte spiced bagels etc. A couple of wonderful things about this recipe, it is pretty low on ingredients, it is SUPER high on protein, so much so, you can pair it with some cream cheese and it is a substantial snack, AND while they arent really fluffy, dense, chewy bagels, they are cute little protein ‘vehicles’ for your favourite spread.

Virtually NO Carb Bagels

3 tablespoons of flax meal (can be found at the bulk barn.. it is essentially ground flax seed)
2 tablespoons coconut flour
4 eggs
1/2 teaspoon baking powder
seasoning: I used a dash of garlic powder and some minced dehydrated onions to make a “savoury” bagel as I wanted to eat them with smoked salmon. But as I said above, the world is a your oyster..

Separate egg yolks from whites and set aside. Whip egg whites until they are foamy and peaked.

add yolks, and combine. In another bowl mix dry ingredients together and add to liquid en mass. Mix to combine and let sit for 10 minutes to thicken.

Prep your ‘non stick’ pans with PAM etc. This is my shameless plug on Baker’s Joy or the Crisco w/ flour. I love these products and find they work WAY better than just straight PAM. *commerical ended*

BAKE at 325 oven for 30 minutes. I made both big and small bagels, and will quote nutrition on both

Me with a salmon-y snack… gravlox, whipped cream cheese, and a mini bagel !! SNACK-O-RIFIC !

SO.. the best for last, this makes 6 LARGE bagels or 24 small ones. Not sure what the best WLS serving would be.. i guess it would depend on how much meat you are throwing on these .. i would say no more than 4 small ones, and I think yesterday I ate 3 with smoked salmon.
Per small bagel: 18 calories, 1g fat, 0.75 g carb, 1.25 g protein.
For 4 small-1 large: 72 calories, 4.4 fat, 3 g carb, 5 g protein

pair these with 2 oz of smoked salmon and 1 tbsp cream cheese and HELLO, your lunch has a whopping 18 g of protein, and only 187 calories

Wow. These look fantastic! Can’t wait to try them. I’m going to have to hit you up for a pantry makeover list when I get closer to my surgery date. I’m spoiled living across the street from a huge Nature’s emporium, and looking forward to trying so many of your recipes.

thanks Lynn.. these were really good.. not as fluffy or dense as regular bagels, but really a great choice with some smoked salmon and cream cheese…
i am going to make them again this week and try a cinnamon brown sugar mix with them..
