Jalapeno Popper Anyone ?

Look at this ! The World’s Largest Jalapeno Popper… or better yet, The World’s Largest Stomach Upset !!

As the holiday season approaches, the exposure to food in social situations will increase. I have already had a couple of invitations for pot luck events, and my “go to” dip is this fabulous dip that tastes like jalapeno popper. Poppers, that deep fried delicious bar food is no longer part of my diet but this dip is a great alternative AND it is high in protein ! I made a batch this week as we were sorting out details for NYE this year, and the first time I made this dip three years ago on NYE.
This makes quite a lot so I half the recipe unless you have a large crew. Ken and I eat with everything, ham roll ups, with celery and carrots, before WLS, with crackers etc. It is spicy and oh so popper-y.

Jalapeno Popper Dip

2 (8 ounce) packages cream cheese, softened
1 cup mayonnaise
1 (4 ounce) can chopped green chilies, drained
2 ounces canned diced jalapeno peppers, drained
1 cup grated Parmesan cheese

Have your cream cheese slightly room temperature and whiz it with some beaters. Add the other ingredients and put into a microwave safe container.

You have the option of serving this dip warm or cold. It is super delicious either way. We like it warmed, so pop it in the microwave for 3 minutes total, taking it out every minute to stir. Serve with crudite or crackers. You aren’t going to believe how much this tastes like something sinfully deep fried !

Nuts on this are as follows (i use half fat mayo, so adjust accordingly if you are using full on fat)
2 tbsp serving is:
68 calories, 6.8 g of fat, 1.6g of carb and 1g of protein
