Breakfast for Dinner

from the what-hell-am-I-going-to-make file is breakfast for dinner. Ken loves breakfast for dinner and we are coming into the last final days right before a market visit, so I am using up some things in the fridge. It always surprises me how the unplanned throw-it-together meals turn out better than expected. I think it is because I have lower expectations for the meal in general.

Anyway, this is an old trick that is protein good, and a great and fancy way to have your eggs.

Egg in a Ham Cup
2 slices of slighty thicker sliced ham
egg
cupcake-muffin tin

for each egg, use 2 slices of ham and dimple into a cupcake tin, crack egg into dimple and pop into a 350 oven until the egg has the right amount of firmness for your liking. I paired this with some garlic saute spinach, and scoop of jalapeno popper dip and some leftover german potatoes. It was delicious, and fast.

Nutrition on this is dependent on how thick-how much your ham weights. Ham has about 30 calories and 5 grams of protein per ounce. This meal usually uses an ounce to two ounces, plus your egg (70 calories) and 6 grams of protein.
Your protein for this is not too shabby !
