Tortilla Soup – Ole

So every year I travel to Tucson for work, in February. I consider myself lucky to get a blast of sunshine right smack in the middle of SAD season, as well as eating tomatoes that taste like tomatoes. Produce seems so fresh and delicious in Tucson as our produce has been hugely blah all winter. My mentor Terri and I always always stop at this cafe to have chicken tortilla soup, with crunched up tortilla chips and cheese on the top.
I hammered out a recipe for this at home and make it when I have chicken left over from a grocery store roaster, or I have some chicken thighs ! I prefer the thighs as they make a better, juicer soup. (ha juicy soup)

Katherine & Terri’s Tucson Chicken Tortilla Soup

1 tbsp olive oil
1 medium onion, chopped
4 garlic cloves
1 lb skinless boneless chicken thighs
4 cups of good chicken stock
1 tbsp cumin
1 tsp chipolte spice
1/4 cup of chopped fresh cilantro
28 oz canned tomatoes
2 tbsp lime juice
1/2 cup of frozen corn
1 zuchini, chopped (adds fibre)
2 carrots, chopped (adds fibre)
2 jalapenos chopped (optional)

Saute onions and garlic in olive oil until soft, add chopped carrots and zuchini, and cook for 10 minutes. Add raw chicken thighs and cook all the way through. Take out of pan once cooked, and leave liquid, as it will make a richer tasting soup. Add spices and lime juice, and let spices (cumin,etc) cook and heat up, 2 minutes. Add tomatoes, chopped chicken, cilantro & stock and let simmer.

I put cut up avocado in the bottom of each bowl, and ladle soup over it.. hmm. You can top with cheese, crushed corn chips or sour cream. Nuts will not include add ons (even avocado)

Nutrition on one cup of this steamy and delicious soup is:
192 calories, 4g fat, 10 carbs, 14.5 g protein
this recipe makes about 8 cups, so share with friends, or it freezes wonderfully for a rainy day
