Splenda, Spice and Everything Nice

So I will admit to lurking on the Splenda recipe website looking to see what I could make for my Thursday night WLS crew. We meet at Starbuck’s every Thursday to gab, and support each other pre and post surgery. We are the loudest bunch in Starbucks and there is always one of us pulling up our shirt showing off some scar or someone just had plastics and are modeling a perky new set.

I want something good.. splenda-good not splenda-don’t !

So I made some Lemon Coconut shortbread… I was a shortbread queen in my former life, so I know how this works. I was leery, as shortbread have VERY few ingredients, and so there isn’t many ingredients to hide of mask some of the chemical taste of the Splenda. This recipe hit a cord for me as the lemon zest was a perfect strong flavour and it pairs so well with the coconut.

Lemon Coconut Shortbread

1 cup all purpose flour
1/2 cup unsweetened coconut
1/4 cup Splenda No Calorie Sweetener, Granular
2 tsp finely grated lemon zest
2/3 cup unsalted butter, cool but not cold

In a food processor, pulse flour, coconut, Splenda, lemon zest and salt. Break butter into pieces and pulse until dough comes together (dough will be soft). Shape into a disc, wrap and chill for at least 2 hours.

Preheat oven to 325 F and line a baking tray with parchment paper. On a lightly floured surface, knead dough once or twice until pliable. Roll out to just shy of 1/4 inch (7 mm) thickness and cut out into 2 inch (5 cm) cookies of desired shape. Bake for 12 to 15 minutes, just until bottom edges start to colour. Cool cookies on baking tray before removing.

Cookies will keep up to 5 days in an airtight container or frozen for a month.

Makes 2 dozen cookies.. or 12 servings !
The nuts on these aren’t stellar, but they are totally great for coffee night with the gals, and John.

follow up is that they were GONE.. and everyone thought they were delicious ! Totally will make again next year !
