Parties & Pumpkin

This was the weekend of Ken’s work Christmas party and of course, me making things with pumpkin in them !!
I tried to make a pumpkin enchilada’s.. So spicy ! Ken loved them, I wouldn’t make them again. As well, I made a rocking pumpkin protein shake. Loved this and it is definitely part of my morning protein shake rotation now. It packs a protein punch and the pumpkin gives you much needed fibre without any spike in blood sugars. With the holidays, it is important for me to stick with my routine so my weight stays the same during this party time of year.

Pumpkin Protein Shake
adapted from BE website

1 cup water
1/4 cup fat-free half & half
1 scoop PURE Unflavored Isolate protein powder
1/4 cup pure pumpkin puree
2-3 tablespoons Splenda Granular
1/2 teaspoon pumpkin pie spice
1 shot of torani syrup (i used sf pumpkin pie)
6 ice cubes

throw everything into the blender, blend and top with some freshly grated nutmeg.

AHHH pumpkin in the morning !!
Nuts on this are: 183 Calories, 2.4 g fat, 14 g carbs, and 26 g of protein
It is a good way to start the day, and it tastes like a glass of pumpkin pie !t


Addition to this post.. i found a pic of my pumpkin enchilada’s.. post in the comments if you are interested in the recipe and I will post it… in theory it was a good idea…and i used Mama Lupe low carb tortillas, so it was carb friendly..
