Chocolate Espresso Custard v 1.2

So this week has been a very low carb week, and while I had a mildly successful holiday, it is nice to have a week that challenges me and shakes things up a bit. I have made espresso jello, and a espresso souffle, but never a custard. Custards are FABULOUS snacks and feel rich and dessert-y without the guilt hangover.
I stumbled across this recipe from the Southbeach diet book and tweeked a bit. I like it SO much I think I want to try a lavender vanilla custard the next time. This is SUPER simple, you can use four small cups or containers to make this, as long as they are heat safe, but not necessarily oven safe; some old coffee mugs work well, and are 8 ounce cups.

Espresso Chocolate Custard
adapted from the South Beach diet

1.5 cups of 1% milk
2 eggs, beaten
3 tbsp sugar substitute ( i used sucralose)
2 tsp instant coffee or instant espresso (those starbucks VIA stick work well, just sayin’)
1 tsp of high quality cocoa
1 tsp of vanilla extract

This is incredibly light on ingredients !

Get out sauce pan, and 4 small dishes that hold 6 ounces (3/4 of a cup). Blend all of the ingredients together and pour into the four vessels. Place these in a sauce pan on the stove, and add enough water so the vessels are half covered. Turn on element and get water boiling.

Reduce temperature, cover and let simmer for 10 minutes.
The puddings wont be really firm, but will firm up when they start to cool. Cover with saran wrap and chill for 3 hours until set.

DELICIOUS !! Nuts on these are just as grand 110 calories, 3.5g fat, 13g carbs, 0 fiber, and 6g protein
pimp these up before you serve them with whipped cream, a sprinkle of cinnamon, or some squeeze of chocolate sauce.
