Reuben-esque !

Eat your heart out Nigella, but this post is about Reuben un-sandwiches ! I think it would be quite something to have a picture of Nigella eating a Reuben sandwich. Total food porn.

I love sauerkraut and who doesn’t love a Reuben sandwich? Corn beef, sauerkraut, cheese on fried rye bread. Sauerkraut is one of my favourite foods, it is salty, crunchy and tart in every forkful. I mentioned last night to a friend who just got her gallbladder out, that the first meal I had after my gallbladder was taken out was a sauerkraut, and mayo sandwich. Not the best choice after gallbladder surgery, but no regrets.
Sauerkraut has many benefits, loads of anti-cancer compounds AND more importantly, has a “pro-biotic” effect. Life is miserable when you are having lower GI issues !

It is cold, and rainy here in Toronto today, so I decided comfort food was on the agenda. I also had a good looking day, so this higher fat choice works into my day and is fine for the 40 grams of fat I am allowed per day. Enter Reuben Casserole.
I played with the numbers on this, taking out the added fats at the end, lowering the cheese, and adding 2 lbs of corn beef. The end result was that it didn’t make THAT much difference in the percentage of fat or calories, so I stuck with my initial recipe.

Reuben Casserole

1 lb Corned Beef, sliced
16 oz Canned Sauerkraut, drained but save 1/2 the juice
6 oz Swiss Cheese, grated
2 tsp caraway seeds

4 tbsp Thousand Island Dressing
4 tbsp Low Fat Mayonnaise

Preheat oven to 350, and prep a 9 x 13 pan with PAM spray.

Layer corn beef in the pan, layer the sauerkraut over the meat, and sprinkle the cheese and caraway seeds on the top, and pop into the oven for 20 minutes.

While it bakes, mix mayo and thousand island dressing together and put aside.
Serve hot from the oven, with a dab of sauce on the top. Next time I make this I will mix sauce in with sauerkraut prior to baking and make the whole thing a bit more saucy and cheesy.

This makes on the high end 8 x 1 cup servings. It was difficult for me to eat my 1/8th portion. Filling and reminds me of a reuben sandwich. My tweaks for next time will make this even better.
