Pulled Pork Heaven !

I am really behind in blogging !! I haven”t been too experimental in the kitchen late and leaning on a lot of the old standbys from this blog. Sometimes you just have to make some of the old favourites. This past week I made Thai tofu-shrimp soup, and meatza.. old friends.

What I AM excited about is this pulled pork recipe from “Not Your Mother’s Slow Cooker” Cookbook. I got this book from the library and it is fabulous !!! Look for some other recipes from this book this week like Frijoles Charro. We had it last night and it was wonderful !

Fabulous Crock Pot Pulled Pork
adapted from Not Your Mother’s Slow Cooker

1 cup ketchup * i used sf ketchup or also PC organic has a low sugar brand
1 cup prepared chili sauce *i subbed in salsa
1/4 dijon mustard
3 tablespoons cider vinegar
3 tablespoons Worcestershire sauce
2 tablespoons honey *sf honey OR sf maple syrup
1 tablespoon soy sauce
1/2 teaspoon red pepper flakes or chipolte
4 garlic cloves, minced
3 lbs pork butt, trimmed of excess fat
3/4 cup of water

In a medium sauce pan combine all the ingredients for the sauce (everything EXCEPT pork and water) and bring to a boil over medium heat, and bring down to a simmer for 5 minutes.
Let this cool completely.

Place pork butt in a ziploc bag, pour sauce over pork, massaging it in, and put into the fridge for 8 hours or overnight.

In the morning pull the pork out of the sauce and put into the crock pot, add 3/4 cup of water to bag of sauce, squish around until combined and pour over pork butt. .
Cover and cook on LOW for 8 – 10 hours.

Pull out when you get home from work, and tent pork for 10 minutes. Shred with two forks, and incorporate sauce into the pulled pork until it is juicy.

We served this with some coleslaw on the side… creamy coleslaw. It is the best dinner and it feels like summer !!

Nuts on this are figured out for 3 tablespoons of sauce and 3 ounces of pork. I broke it down into components if you want to adjust the sauce to meat ratio.

Calories: 23, Fat: 0.02g, Carbs: 5.42g, Protein: 0.39g
Pork: 3 oz
Calories: 131, Fat: 3.5g, Carbs: 6g, Fiber: 1, Protein: 18 g
