Snack Week: Easter Pudding and …

.. more nuts ! Easter holiday has a component of eating junky food and large dinners. Thankfully Ken and I don’t do anything special for Easter other than revel in the down time and maybe eat a bit of a sugar free chocolate bunny.

A classic that makes me laugh every year !

Snack Number One is a dessert or a great morning treat. This has blueberries, flax and my favourite, blends in the food processor, so it whips up super fast. Next time I would double up the protein scoop, as it is so hidden in this dessert but would pump up the serving by 3 more grams.

Blueberry Not-Really-Bread Pudding

1/2 cup hazelnuts, raw
1/2 cup Almonds, Whole, Raw
1/2 cup Old-fashioned Rolled Oats
3/4 cup Apple Sauce (unsweetened)
2 tsp Pure Vanilla Extract
3 tbsp Sugar Free Maple Syrup
1 scoop – Vanilla Protein
1 tsp Flax, Ground
2 tsp Cinnamon

1 1/4 cups Milk-1%

1/2 cup Blueberries, frozen

Prep a 9 x 9 square baking pan with spray, and pre-heat oven to 350 degrees. Pull out the food processor, and add all the nuts, applesauce, oatmeal, spices, extract, flax, protein powder, and maple syrup. I used a blender, but it didn’t have enough chopping power to blend the nuts etc. Ideally you want this all to mix and chop into a paste.

Add milk and blend for a minute or two until you get a consistency like below.. smooth !!

Pour into your prepped pan and sprinkle the blueberries on the top of this dessert and pop into your 350 degree oven. I will admit to tasting the batter… YUM ! The chopped nuts act like a “flour” and made this into a thick, cinnamon spiced yumminess.

Pop into the oven for 40 to 50 minutes, rotating once halfway through the baking process.

This dessert comes out like a bread pudding, with LOADs of much needed fiber for our diets as well as good unsaturated oils from the nuts and blueberries for anti-oxidants.
It is like eating a blueberry brownie !

Snack Number Two
I took all the chocolate covered pecans I made to a seder last week, so I made some more with hazelnuts, almonds and pecans. I used a twist on the chocolate and added some instant espresso and cinnamon. It turned out to be a genius idea. Jude came over to run stairs with me on Easter and tried the hazelnut and said it was eating Nutella. WINNING !!
The recipe is the standard nut recipe, with egg whites, water and 1.5 tbsp of cocoa, 0.5 tbsp of instant espresso and a dash of cinnamon.

Ingredients prepped and ready to go ! If you whip up the egg whites in your Kitchen Aide mixer, this whole recipe takes less than 5 minutes to make.

Ready to go into the oven. You CANNOT underestimate how delicious your house will smell as they roast and dry in the oven. Remember let them cool before popping one in your mouth.. they are nuclear when they come out of the oven.

that blueberry recipe looks like a clafouti! i’m going to go to the barn of bulk tmw and get the ingredients. i think dan will really like it!
