Carbless Cookies ?

Lack o carbs doesnt exist, but using almond flour in baking can and will decrease the carb load for ANYONE and hence better for those who are diabetic, going primal, or just trying to stay away from the processed junk. Lack o carbs doesnt mean lack of taste nor does it mean it is low fat or equivalent in calories…. nut flours tend to be higher in fat and calories, but you dont get that roller coaster of insulin and you feel satisfied with one or two instead of an entire box or sleeve.

I made these cookies from All Day I Dream About Food. As I was preparing them Ken came into the kitchen sniffing around and eyeing what I was doing.
He didnt say much about these cookies but the next night I come home and the batch was substantially wiped out. He has his friend James over who plowed through a lot of them and then was told they were sugar free, and then proceeded to eat more.

NEVER recommended when something has sugar alcohols… in mass quantities you will get the SA farts !

farts and calories and fat.. i didnt do a good job selling you the merits of these cookies. I really like them, and will definitely make them again. My subs are in bold.

Cranberry Walnut Chocolate Chip Cookie

2 1/4 cups almond flour
1/4 cup granulated erythritol (used xylitol)
1/2 tsp baking soda
1/2 tsp xanthan gum

1 large egg, beaten
1/3 cup coconut oil, melted (used butter)
1/2 tsp vanilla extract
16 drops stevia extract
1/4 cup unsweetened dried cranberries
1/4 cup chopped walnuts (used pistachios)
1/4 cup sf chocolate chips (used cocoa nibs)

Preheat oven 350 and parchment a baking sheet.
In a large bowl whisk together almond flour, sweetener, baking soda, and xanthan gum. Stir in eggs, oil, vanilla and stevia until combined. Stir in cranberries and pistachio.

Mix well. They will be a grainy texture.

Scoop onto parchment paper and flatten with hand. Bake for 8 minutes or until they start to brown. They will be gooey until they cool and harden up.

Calories on these are for a seving of two. At the size I made these cookies, this recipe yielded 36 cookies.
Per two cookies: 144 calories, 6 carbs, 13g of fat, and 4g protein
