Move Over Bill Cosby, this Girl Made Pudding Pops!

SO… since the creamsicle worked out so well, Ken and I thought we could re-make the richness of a jello pudding pop without using actual jello pudding.
We like the idea of the richness of the pudding pop coming from an avocado, and it is less boxy and processed. Sorry Kraft!

Chocolate “Pudding” Pops
adapted from the post workout creamsicle

1 1/4 cup unsweetened coconut milk or almond milk (i used almond this time)
1/2 avocado
1/2 cup water (or coconut water.. whatever you have going)
1 scoop (1/3rd of a cup) of chocolate whey protein powder
2 medjool dates, pitted
1 tsp lemon juice
1 tsp coconut extract
1/4 cup of cocoa powder (the best you can afford)
16 drops of stevia (to sweeten up the cocoa)

Plug in the blender and get out the popsicle holder and sticks. Grab your blender of magic bullet and blend this up. It will be thick! I couldn’t keep my fingers out of the bowl.. the avocado gave this a really good mouth feel, like rich cream, without the dairy.

Freeze overnight in popsicle tray. My tray makes 7 popsicle.. must be a weird feng shu maker, odd numbers and all.

THESE THINGS ARE GOLD! I love them, and I love that they are dairy free-gluten free for all those who suffer.

Nuts are fluid based on type of milk used but this is a good guideline. These things are golden for anyone who has to worry about sugars. They are super creamy and taste bad for you.
