Primal Green Eggs and Ham & Tajin!

So after getting back from Tucson, there was nary a vegetable in the crisper, so I needed to whip up something with canned goods and a couple of rogue veggies to tide up over until we hit the market. Dr Seuss and The Lorax are back in vogue again, as my brother’s kids love them both, so this got me thinking. I DO have a ham steak in the fridge, and eggs.. Green eggs and Ham, Sam I am!!

I gotta rave about Tajin. Tajin is this awesome citrus chili seasoning that makes everything SUPER delicious without MSG. If you can find it this far north you really need to BUY it. This stuff is amazing and I am upset I didnt buy more than one bottle.

“Its most popular product is a tangy, spicy “fruit seasoning” powder (called salsa en polvo in Spanish) consisting of chile peppers, salt, and dehydrated lime juice. It is available in small plastic shaker bottles that can be found in almost any general store, and is commonly used as a condiment on the tables of many Mexican restaurants, and as a seasoning in micheladas, a beer cocktail.”

It’s a good time!! We hosed these egg bites with it and they were delicious, and didnt miss the cheese one bit.

Green Eggs & Ham Bites
from me,

1 PC ham steak
7 eggs
1 head of spinach, arugula whatever green veg you want to use
1 onion, chopped
1 tbsp fat of your choice
1 tin of chopped green chiles
2 fresh jalapenos, de-seeded
2 green onions, chopped
1 tbsp garlic powder
generous sprinkles of Tajin

Haul out the muffin tin and a fry pan, and pre-heat your oven to 350 degrees. Heat up oil in fry pan and throw in your onions to saute. I hate raw-ish onions, so even in a crock pot recipe, I pre-saute them. Once the are soft, throw in your leafy greens and cook for 3 minutes so everything is wilty.

In another big bowl, throw in your chopped ham, eggs, chopped green onions, green chiles, and jalapenos. Once the sauted veg are cooled, add those to the bowl and give it a good stir to combine. I then threw in 1 tsp of xanthum gum or 1 tbsp of coconut flour to thicken it up.

Use a ladle and scoop into into a silicone cupcake holder or make sure you PAM the muffin tin prior to plunking egg in there, or it will be stick-o-rama. Ken is using my NEW favourite seasoning, TAJIN.

Tada!! Egg bites! This recipe made 17 egg bites, and I used the last two carrots in the crisper to make a carrot coleslaw on the side. Easy, fast, and oh so good without resorting to ordering Swiss Chalet when it looks like there isnt anything in the fridge and enough leftovers to have them cold for lunch the next day.

Kat, I Love that you love Mexican/Spanish/Tex-Mex as much as I do! It’s so difficult to get the good products this far North! We need to find a good mail-order place and have Mexican night!

I am going to look out for this at some of the South American-Hispanic food shops in Kensington Market. If it is anywhere in the city, Perolas will have it
