Michigan Shopping & Cauliflower

OH.. it is so fun to go to the states shopping. This time, Ken and I decided to do all the cheapy stores as we really didn’t need anything, but were curious about some things. Let’s face it, the grocery stores in the states are exciting enough.. you had to see us in Walmart.
We also big vintage clothing shoppers and went to this fabulous store in Royal Oak, called Lost & Found Vintage. This place rivals Gadabout here in Toronto, HUGE selection in both men’s and women’s fashion as well as furniture and accessories.

Food in the states is hard… so much deep fryer, so much shredded cheese on EVERYTHING. I was glad to come home and I spent the entire day yesterday (Turkey Monday) in the kitchen.

For lunch we had a low carb Cauliflower crust pizza, and for dinner Cassoulet with pumpkin bars. The pumpkin bars were weird, so they are only going to get a mention, but the pizza and the cassoulet are a do-over.

Cauliflower Pizza Crust

Roast califlower in oven, or steam, boil..however you want to cook it. Don’t over-cook it, and let it cook so you can handle it.
I like to roast mine as it makes it sweet. You’ll only need to use a cup for this recipe so frozen is also good if you dont want leftovers.

1 cup of riced* cauliflower
1 egg
1 cup grated low fat mozzerella
1 tsp oregano
2 tsp parsley
1/2 tsp fennel

*Grab your cheese grater and grate the cauliflower… aptly named “ricing”.
Throw a cup of non-packed cauliflower into a bowl with egg and cheese and mix. Grab a baking sheet with parchment, and spread clump onto sheet and squish it down flat. Sprinkle spices on flatten ‘crust’ and throw into a 400 F oven for 15 minutes.

Prepare other toppings and once the crust comes out, add and put back into the oven to melt and be delicious.

I used some sliced turkey pepperoni, about a 1/4 cup of pizza sauce, and an ounce of cheddar cheese. Toppings will vary calorie count, so nuts are just for the crust.

Calories: 146, Protein: 20, Fat 6g: Carb 4 g

Cauliflower will continue with a recipe for Mac & Cheese !!

Sooo this is delicious!! I made the error, though tasty of using low fat Tex Mex cheese and brought the Nuts up in fat and calories. Eek!
